I have been a vegetarian/sometimes vegan for over 10 years, but I have had pretty severe food allergies my whole life. I always have to be careful eating food that other people have prepared, even at family gatherings. Now, I don’t expect anyone else to cater to my dietary preferences and needs, so that means I almost always bring a dish with me that I KNOW I can eat.
Instead of grabbing a bag of chips at the store, this vegan bruschetta is my go-to when I bring an appetizer or snack. It’s so simple and easy, but it’s SO good! Seriously, I could eat this stuff until my mouth hurts.
I like to use a drop of basil essential oil in this (I use Young Living Vitality oils and you can read more about that here), but if you don’t have the oil or don’t like ingesting them you can easily use about 3 T of chopped, fresh basil instead.
To make this really easy I often just grab a baguette from the grocery store. They are only about $1, and work great for this recipe. But when I have the time and really want to make this appetizer outstanding, I’ll make my own. There are tons of easy recipes online!
I wasn’t sure if the kids would dig this, but they SCARFED it. I had to practically beat them off so I could take pictures.
Isn’t that baguette pretty? Ok, well the top half anyway.
- 4 ripe tomatoes, diced
- 1/4 C olive oil
- 3 drops Young Living Basil essential oil
- 2 T dry parsley
- 1 clove garlic, minced
- salt to taste
- Combine all ingredients in a large bowl and let marinate at room temperature for several hours. Use a spoon to place bruschetta on top of baguettes or french bread. Salt to taste.
This recipe is my FAVORITE in the summer when I have fresh tomatoes growing in pots on my deck, but honestly I love it with out-of-season-grocery-store tomatoes, too. You could mix it up and spoon this over some avocado toast, or even add some chunks of avocado into the bruschetta itself.
Right before I serve this I slice the baguette as thinly as I can and then toast it in a pan with some olive oil and minced garlic til it is golden brown.
