A lot of people like to make New Year’s resolutions, but fall is the time when I reflect and reset. Its when the kids head back to school, things slow down at work, and I have a little time for myself. After a jam-packed busy summer and too many dinners that consisted of a pizza box, I am ready to reset and get on a better trajectory.
Something I know to be truth for myself is that I can’t make sweeping lifestyle changes and expect them to stick. If I go cold turkey, or don’t plan realistically, I am setting myself up to fail. My focus has been on making better choices, and replacing some old vices with new ones. I love a glass of wine at night, but lately I have been indulging in some sparkling water with a drop or two of lime essential oil. And when that inevitable sweet tooth hits, I have been satisfying it with this homemade vegan strawberry vanilla ice cream.
This ice cream is not only delicious, its incredibly easy and requires no special equipment to make. The addition of protein powder makes it an even better snack option. I chose the Kashi Organic Breakfast Superblend because my breakfast typically consists of a smoothie, and this powder is USDA organic, has diverse nutrition and packs 15g of protein per serving.
For this recipe you simply need two scoops of Kashi Organic Breakfast Superblend in Rise & Shine Vanilla, 16 oz of frozen strawberries, and about 1/2 C almond milk. If you want an even creamier option, you can use a can of coconut milk, too. Add half of the milk and the protein powder to a high speed blender and mix, then add the strawberries and blend until smooth and creamy. Slowly add the rest of the milk as needed for texture and consistency.
Once it’s completely blended, add to a bowl and loosely cover with some plastic wrap. Place in the freezer for about 30 minutes, then remove and stir back into a creamy consistency. Enjoy with zero guilt!
This ice cream has endless flavor possibilities and combinations as you could use any of the Kashi® powders, and you can substitute any frozen fruit. Bananas are a popular one, or even peaches.
