Did you have a nice Thanksgiving? My stepsons were able to come, and since they live 14 hours away, our time with them is always precious. On Thanksgiving morning we woke up to ice and snow, so ended up missing a meal at my sister’s, but had our own and made the best memories!
I made a big, traditional Thanksgiving meal at lunch (I had some stuff on hand just in case), and all afternoon we decorated the tree, and pulled out Christmas decorations. That night the kids wanted to have a Christmas movie marathon, and what they call a “picnic in the living room” where I serve them finger foods and they sit on a blanket in front of the TV.
Thank goodness we live a block away from Walmart. That place has saved my bacon this holiday season, and made the chaos of holiday entertaining so much easier! My husband trekked through the snow and picked up a Red Baron® Thin & Crispy Pepperoni Pizza and a Red Baron® Thin & Crispy Supreme Pizza, some drinks, and a movie to get our night going.
I had a fridge full of food from my winter storm preparation, so I decided to see what easy sides I could whip up to really make it fun for the kids. I whipped up green bean fries, toasted ravioli, and mini-breadsticks, with a delicious garlic dipping sauce. These are all super easy, but tasty, so you will definitely want to try them out the next time you have a family movie and pizza night! The best part is that you can make all of these together, with many of the same ingredients.
Green Bean Fries and Toasted Ravioli
Ingredients:
4 pieces of white bread, toasted and blended in a blender OR 1 C of bread crumbs
1/2 lb fresh green beans with the ends trimmed
8 oz frozen cheese ravioli
1/3 C Agave Nectar
1/3 C Almond Milk
2 t salt
1/8 t pepper
Whisk almond milk and agave nectar together in a bowl. Add bread crumbs, salt, and pepper to a second bowl. Dredge green beans and ravioli in liquid mixture first, then bread crumbs. Lay on a parchment covered backing sheet, and lightly salt green beans. Bake in a 425° oven for 10-12 minutes, or until golden and crispy.
Garlic Dipping Sauce
Melt 4 T of butter in a saucepan, and slowly stir in 1/2 T garlic powder, and 1/4 t of salt. Allow to cool before pouring in small dipping containers.
Mini Breadsticks
Use pizza dough in a can, or halve this recipe. Flatten into a baking sheet and cook at 425° for 15 minutes. Brush the top with garlic dipping sauce, then cut into small breadsticks.
While this meal was a lot of fun for the kids since it was all finger food, mom and dad really enjoyed the thin, cracker-y crust of the Red Baron Thin Crust pizzas, and the sweet and savory taste of the appetizers.
