Planning meals everyone in the family likes can be a daunting task, but throw in the fact that I am a long-time vegetarian and the rest of my family are not, and it can be downright frustrating! It has taken some trial and error, but eventually we found lots of different meal options that we all like and can enjoy together without this mom having to cook two dinners.
The recipe I am going to share with you today not only satisfies the vegetarians and carnivores in my family, it is super fast and easy! Vegetarian cuisine is a great way to incorporate some healthier recipes into your routine, especially if you are trying to keep vegolutions – the resolution incorporate more veggies into your diet!

While I was in Walmart I grabbed the rest of the ingredients like Great Value™ California style vegetable mix, an orange, and some quinoa. You could use rice or even noodles in place of the quinoa.
For this recipe I encourage you to use what you have on hand or are comfortable with. I like to use the juice of 1/2 of an orange, but you could also substitute 2 T of orange juice. Instead of soy sauce you can use coconut aminos, or tamari. In the sauce you can sub agave nectar for the maple syrup, or even honey if you aren’t concerned with keeping the recipe vegan. It’s all about easy!
Start by adding the Chik’n strips and frozen veggies to a skillet with 2 T of water. Place over medium heat and cover. Stir every couple of minutes until chik’n strips and veggies are warm. In a separate bowl whisk together vinegar, the juice of half the orange, soy sauce, corn starch, and maple syrup. Pour mixture into skillet with veggies and Chik’n strips and simmer until thickened. Serve over warm quinoa!
If you really want to make this quick and easy you can prepare the quinoa ahead of time and just reheat it for the meal. I like to make it 1 part quinoa to 1 1/2 parts vegetable broth on manual in my pressure cooker for 2 minutes with 10 minutes natural pressure release. While it is cooking I cook the stir fry on the stove. You really can’t beat a 10 minute dinner prep!
You don’t have to be a vegetarian to incorporate some vegetarian or vegan dishes into your meal plan. This was really tasty, and literally took me less than 15 minutes to prep, cook and get on the table. The whole family loved it, so I am going to keep a bag of MorningStar Farms® Meal Starters® Chik’n Strips in my freezer for those nights when I need something quick and easy!
- 1 package MorningStar Farms® Meal Starters® Chik’n Strips, 13.5 oz
- 1 16 oz package Great Value™ frozen California Mix
- 2 T water
- 2 T orange juice
- 2 T vinegar
- 2 T Soy Sauce
- 2 T Maple Syrup
- salt to taste
- 2 C cooked quinoa
- Add Chik'n strips and frozen veggies to skillet with 2 T of water over medium heat. Cover, stirring occasionally until heated through. In separate bowl whisk orange juice, vinegar, soy sauce, and maple syrup together. Pour over cooked Chik'n strips and vegetables in skillet and stir to cover. Cooke over medium heat til liquid reduces. Salt to taste. Serve over quinoa.
