This week I saw a recipe for deep fried burritos that looked sinfully delicious, but when I added them to my menu for the week, I was unable to find the recipe again. So what you see before you was winging it. Shocking I know.
I simply used corn tortillas, some cooked black beans that were seasoned, and cheese. I put the beans on the tortilla with a fork, mashing them a bit as I went, reasoning that the beans would help to hold the burrito together, but as you can see that didn’t really work.
I don’t have a deep fryer, so I added some vegetable oil to my large stock pot, and heated it on medium. I suspect that a lot of my problem is that the oil was not hot enough when I put the burritos in, because they did not “hold their fold” even when I inserted a toothpick, so I renamed them tacos.
I left them in the oil til the tortilla was a golden brown, and then placed them on a paper towel-lined plate to absorb the oil.
They weren’t pretty, and they definitely aren’t healthy, but they certainly were tasty! I served these with fresh tomato and avocado, but salsa would be tasty too.
Next time I might try flour tortillas vs. the corn, and cook my beans a little longer til they are of the retried consistency. Oh, and heat my oil properly.
What is cooking without some experimenting? And alls well that ends edible!
