My husband and I are starting a whole foods plant based diet this week. That means no processed food, no added sugar or salt, and a whole lot of fruits and veggies. While my kids are great fruit and veggie eaters I think there might be a literal mutiny if we tried to force them into 100% clean eating overnight. So that means I am basically making 2 separate meals at every mealtime. You know, because a working mom has so much spare time anyway.
As you can imagine I am all about the quick. easy meals that my kids will actually eat. Bonus points for one pot meals. This cheesy sausage pasta checks all of those boxes, and my kids devour it.
I have been able to find ring sausages 2 for $5 at my store pretty consistently this summer, and pasta for about 77¢. The prices may vary dramatically in your area, but for me I am able to make this for less than 75¢ per serving. That’s a win-win for a quick one pot meal that keeps me out of a drive through!
I don’t eat onions, or sausage for that matter, but the minute I started sautéing those ingredients together I was instantly taken back to my grandma’s house when I was a child. She always called it Polish Sausage and would serve it with a side of Spaghetti O’s. I think I enjoy making this dish for the smell and memories more than anything!
You HAVE to use a yellow onion for this. I tried a purple one and it was very meh in this flavor panel. I use vegetable broth because I am a vegetarian and that is all I keep on hand. I’m sure you could successfully use chicken or beef broth as well. I also use coconut milk because I don’t keep dairy other than cheese on hand. I like canned coconut milk to add a little more creaminess than regular or almond milk. You can refrigerate it to separate the creamy fat from the liquid if you want it REALLY creamy. You could also use regular milk or heavy cream.
- 1 T Olive Oil
- 1 sausage ring (12 oz) chopped
- 1/4 of a yellow onion, diced
- 2 C vegetable broth
- 1/2 cup canned coconut milk
- 8 oz uncooked pasta
- 2 C cheddar cheese
- salt to taste
- Add olive oil to pan and sauté onions and sausage over medium heat until onions are translucent and sausage is browned on both sides. Add pasta, vegetable broth, diced tomatoes, and coconut milk and stir. Simmer with the lid on, stirring occasionally, until pasta is cooked, about 15 minutes. Remove from heat and immediately stir in cheese. Salt to taste and serve.
