So we are on week 2 of the $50 grocery budget, and have stuck to it! This week we actually came in a little under budget. Last week we had a LOT of beans and rice, so I tried to switch it up a little this week. Here is our dinner menu:
Sunday – Vegan Meatloaf and potatoes
Monday – Vegan Pancakes
Tuesday – Crock pot beans and rice
Wednesday – Raisin and peanut pilaf
Thursday – Vegan sloppy joes
Friday – One pot pasta
I made two loaves of bread that will hopefully last the week, two dozen 5 minute muffins, vegan peanut butter, and will still make crackers and buns for the sloppy joes.
This week apples and roma tomatoes were on sale, so we stocked up on those, and also bought a couple of blocks of tofu. I am trying to introduce some higher-protein breakfast options, so we are doing some scrambled tofu.
