It seems like we blow through a lot of cereal around these parts, and my daughter is usually the only one who eats it. I decided that I would make her some muffins for breakfast, not only as a treat, but so I didn’t have to add the cost of cereal to my weekly grocery list.
I perused a lot of vegan recipes online and tweaked until I came up with a good recipe. The batter for these muffins is shockingly dense, but they bake up to a nice, fluffy muffin.
I don’t know if we actually saved any money because these got gobbled up pretty quickly! Whether you purposely eat vegan, or just don’t have any eggs on hand, this is a good recipe to add to your collection.
- 1 1/2 C flour
- 3/4 C sugar
- 2 t baking powder
- 1/2 t salt
- 3/4 C almond milk
- 1/4 C vegetable oil
- 1 C frozen bluberries
- Mix dry ingredients in a mixing bowl. Add milk and oil, and thoroughly incorporate. Mix in blueberries and then spoon into muffin liners in a pan. Bake at 400° for 30 minutes.
